Carolize Coetzee takes the reins at Tokara Restaurant
Carolize Coetzee has joined Tokara Wine and Olive Farm as Executive Chef of the exciting Tokara Restaurant.
She moved to Tokara from Dornier Wine Estate, where she served as Head Chef for two years.
Carolize studied at the Culinary Academy and has held kitchen positions at Simonsig Cuvée and Cavalli Estate, among others.
Carolize was born in Vryburg, a large agricultural town situated in the North West Province of South Africa and grew up in Kimberley and Humansdorp, where as a child she envisioned pursuing a career as an Air Hostess, a Veterinary Doctor and a Physiotherapist.
Her favourite memories are of meals spent laughing and telling stories around the kitchen table, enjoying her mother’s lovingly prepared food and heirloom recipes being passed on from one generation to another.
“My most cherished food memories involve emotional and physical sensations. Some of these are rooted in the expectation of reliving a fond memory, such as waiting for a cherished ingredient to be back in season, while other are more nostalgic, such as that morning slice of farm bread, heaped with my grandmother’s homemade marmalade.”
